Arla Foods launches clean label ambient yoghurt concept to meet Chinese demand

Yoghurt sales are said to be growing faster in China than anywhere else in the world, with ambient yoghurt the fastest growing segment in the country’s liquid dairy market.
Arla Foods Ingredients has launched a ‘first of its kind’ clean label concept to help brands meet growing demand for ambient yoghurt in China using Nutrilac YO-4575, a 100 percent natural whey protein designed to give unrefrigerated yoghurts a premium positioning with all-natural ingredients.
Nutrilac YO-4575 is said to be unique due to its heat-stability and texturising properties, as well as its ability to keep ambient products smooth and stable throughout shelf life without the need for additives or preservatives.
The ambient yoghurt category, which accounted for almost 30 percent of China’s entire yoghurt market in 20191, has seen a higher growth rate than both chilled yoghurts or liquid milks.2
Research has also shown that “made with real ingredients” and “no artificial flavour/colours” are the most important claims for Chinese consumers.3
In a bid to help manufacturers meet this need, Arla Foods Ingredients created the ambient stirred yoghurt concept containing just five all-natural ingredients (skimmed milk, cream, Nutrilac YO-4575, sugar and native tapioca starch).
It contains more than three percent protein, with Nutrilac YO-4575 reportedly providing high nutritional value due to its high amino acid content, and it is sourced from the milk of grass-fed cows in the EU.
“Ambient yoghurts with a natural label are looking more and more like a major opportunity to capture a slice of China’s growing yoghurt market.
