This application note demonstrates the utility of Raman imaging for characterising various food samples such as honey, chocolate and fat spreads, leading to a comprehensive understanding of the products and the production processes.
Properties of food such as flavour and texture critically depend on the distribution and microstructure of its various ingredients, including additives such as emulsifiers, stabilisers and thickeners. The food industry therefore requires powerful analytical tools for optimising
products and ensuring their compliance with quality standards. Raman microscopy is ideally suited for this task, as it can characterise the chemical composition of heterogeneous samples on the sub-micro meter scale and analyse particles, for example in beverages.
