Award-winning food industry training specialists, Verner Wheelock Associates, have just added a brand new course to their portfolio. ‘Understanding Flavours’ will appeal to anybody involved in the development, manufacture and marketing of food such as marketers, quality controllers, chefs and development technologists, as well as trainee flavourists.
The two-day course, which runs from 3rd to 4th April 2012, will give delegates an insight into how both savoury and sweet flavours are created and provide an understanding of the important role flavours play in palatability, authenticity and consumer choice. It will be tutored by internationally renowned flavour specialists, Dr David Baines and Richard Seal, whose ‘Creating Savoury Flavours’ course for VWA is extremely popular and attracts candidates from around the globe.
The new course comprises a combination of lectures, demonstrations and applications and will cover topics such as flavour enhancers, alternatives to MSG, techniques to maintain the impact of flavours over shelf life, flavour perception, balance, flavouring substances and legislation. Delegates will also have the opportunity to create their own flavours using the principles they have learned.
VWA’s Managing Director, Alison Wheelock, commented, “Flavour is so vital in customer choice and repeat purchase that it is important that anyone involved in making decisions about new product development or reformulation should understand its role. The ‘Understanding Flavours’ course has been developed to meet this growing need and we hope that the practical element will enable delegates to fully understand the process of flavour creation and to learn through tasting and sensory evaluation.”
