Foodborne pathogen testing is big business. Listeria testing in food production facilities is arguably one of the most important processes to get right. Although the incidence of infection with Listeria is comparatively low in the US, around 0.24 compared to Salmonella’s 15.89 (per 100,000 population), the case-fatality rate is estimated to be 20 percent, dramatically higher than the <1 percent rate for Salmonella.1 Due to the severity of infection with Listeria (L.) monocytogenes, many countries specify testing specifically for this species of pathogen, whereas others require testing for Listeria species in general.
