Thermal analysis provides valuable information about melting, gelatinization, denaturation, water content, crystallisation, oxidation and many other thermo-physical characteristics of foodstuff. All these parameters are fundamental in today’s food industry. The data obtained is essential to optimise the design, handling, processing and packaging of your products.

In this webinar, we discussed the basic properties of food and the impact Thermal Analysis has among industries and applications. Specifically, this webinar addresses the following techniques:

Angela Hammer mettler toledo food product thermal analysis on-demand webinarDr. Angela Hammer studied chemistry. During her dissertation at the Institute of Organic Chemistry at the Swiss Federal Institute of Technology in Zürich, Switzerland, she specialised in the development of immobilised components in ion-selective electrodes based on polyurethane membranes.

She then joined Sika Technology AG in Zurich Switzerland, as an Analytical Chemist. In 2007 she joined Mettler-Toledo AG and has worked there since as application specialist for Thermal Analysis. In her present position she uses, teaches and supports DSC, TGA, TMA and DMA instruments at the Mettler-Toledo AG head office in Switzerland.

Santosh Dandekar is an application specialist for thermal analysis. Following an M.Sc. degree in physical chemistry from the University of Mumbai in 2005, he worked in the pharmaceutical industry as a materials characterization analyst. Mr. Dandekar has been with the Mettler Toledo thermal analysis market support group in Mumbai since 2011. He is member of the Indian Thermal Analysis Society.
