Bochumer Fleischhandel, a meat-processing company with a long tradition, processes approx. 250 tons of pork and beef each day. The company’s location in the middle of the Ruhr district, Germany’s industrial heartland, provides ready access to customers and ensures fast and cost-efficient delivery. Still, the most important things for a good meat-cutting factory are hygiene and control – meat is a natural product.
“Ever higher quality requirements and growing consumer demands make permanent microbiological, physical and chemical control of our products indispensable”, stressed Heinz-Wilhelm Kesten, General Manager and owner of Bochumer Fleischhandel, in an interview with Sandvik.
During our visit to the factory in Bochum we gained greater insight into ham cutting and trimming operations. In this area, in particular, the company attaches great importance to using a cleaning process that is ecologically and economically viable.
Thus short cleaning times, high availability and food-compatible cleaning agents are important criteria in deciding what type of conveyor system to use…
